Cooking Over a Fire with Chef Amanda – July 18, 2024

Spend an evening cooking a rustic and delicious feast over the fire with Chef Amanda and her husband, Adam. Learn different cooking techniques over coals and open flame while enjoying a three-course meal. 

Start with kneading and baking a Crusty Dutch Oven Bread over the coals. Next, over the different zones of the fire, we’ll cook up Grilled Local Vegetables with Red Onion and Feta, as well as Grilled Buttermilk Chicken.  For dessert, make sure you save room for an East Coast treat, Blueberry Grunt, cooked in a skillet over the coals. 

About the instructor: 

Amanda Harrison is a professor of culinary skills for both Loyalist College and Durham College. She also combines her professional cooking experience with community development work at her role with Nourish (YWCA Peterborough) where participants cook, garden and advocate for a better food system.

Amanda believes in the power of food to create belonging, confidence and new opportunities. Amanda graduated from Trent University in 2006, George Brown College in 2009 and achieved her Red Seal in 2013.

She lives in Peterborough with her husband and their four year old son.  They all enjoy gardening and cooking outside in their backyard, and camping in Ontario Parks.
